compose: usa volumi Docker nominati per /data e /etc/gitea

I bind mount ./data e ./config stavano dentro la cartella code/ che Dokploy
ri-clona ad ogni redeploy, cancellando i repository. Passaggio a named volumes
(gitea-data, gitea-config) che sopravvivono ai redeploy.
